Lunchtime at the Peak Café: Chicken noodle steams in the kettle, ladle at the ready — egg noodles, carrots, celery, peas.
The concoction is almost thick enough to support a spoon.
The soup at Larimer campus’ dining stop isn’t limited to chicken noodle. Chili, minestrone, broccoli-potato and more are prepared on a rotating basis.
More hot lunch offerings — chicken sandwiches, hamburgers, and mac-and-cheese — sit ready-made nearby.
The cafe has been serving soup and other hot meals for almost 30 years since the Longs Peak Student Center opened its doors. It is run by five work-study staff members alongside state employees.
They cook breakfast to order (until 10 a.m.) every week day, along with lunch sides: fries, onion rings, potato wedges.
Crystle Rutledge, assistant manager for five years, said that the cafe is always interested in students’ feedback. However, Red Bull — one of the most requested items — can’t be sold at the cafe due to drink licensing agreements.
She said the cafe’s employees are always interested in hearing students’ suggestions for food made fresh in their kitchen.
It’s open 8:30 a.m.-3 p.m. Monday-Thursday; 9 a.m.-12:30 p.m. Friday; closed weekends.
